This week has been strange- in a transitional way. Summer session is ending. The school year is coming to a close. But it’s been an odd transition this time around. While my semesters have thus far kind of slammed shut with a big, fat, frenzied finish, this summer one is just sort of lazily trickling to a close. Instead of a hard shift to a different mental space, it’s been a slow, blinker-on-for-10-miles-before-turning kind of transition. I’ll take it.
Summer session ending is a good thing. Mainly because I have a serious hankering to read some fiction. And to get back on a decent bedtime schedule. And, well… to put my primary focus on being fully present in summer… while it’s here! I wanna be outside more than I’m inside. That’s the goal for the rest of July and August.
So here’s something sunny and bright and orange! It’s PEACH season, y’all! (Y’all? Yeah, okay, I can be southern today. It just kinda came out.)
I wanna put them in a pie… and a cobbler… and eat them straight up with whipped cream… and on top of my pancakes…. Peaches. Yeeeeessss.
Because carrots are also orange, and sweet and complimentary (and a vegetable…shhh), I tossed one of those into this recipe, too. You won’t even realize!
This smoothie is simple and light. It honors the delicate, fuzzy-skinned fruit that is the peach. Drink it up with the sunrise (or the sunset…why not?) since it color coordinates so well…
The Friendly Peach
Makes 1 smoothie
1 medium Peach, including skin (pitted and chopped)
1/2 medium banana (frozen)
1 medium Carrot (peeled and chopped)
1 tbsp. Flax meal
3 Ice cubes
1/2 cup Water
Toss all ingredients into a blender. Blend until smooth (roughly 30 seconds to 1 minute depending on device).
