A high of 90 degrees today! And, I believe I promised that when the weather heated up, I’d supply more smoothie recipes!
So, here’s the plan. A new smoothie recipe every week! Through the end of July! Woohoo!
Let’s all remember to hydrate properly, get our blenders revved up, and make some satisfyingly cool (and nutritious) treats!
This week’s inspiration: The Mr. Softee truck that makes rounds of my neighborhood pretty much every night around 8:30pm.
Ice cream!!! I would totally be out my door and chasing it down the street… But by the time I managed to run down the 5 flights of stairs, and out the apartment building…. It may have turned into a greater running commitment than I bargained for.
Maybe on the right day, when I happen to be wearing workout clothes and sneakers while patiently waiting on my couch…. Yeah, when that day arrives, I’m all over that ice cream truck running race!
Hopefully that day will not involve the number 90 on the thermometer…
But in the meantime…we can make this deliciousness that I’m dubbing the “Mint Chocolate Awesome” green smoothie.
Okay, it’s not ice cream. BUT it’s a treat that’s totally workable as a summer daily habit- should you be a mint-chocolate fanatic, and you were so inclined. It has a bit of protein, some healthy fat, and some dark chocolate for a little heart healthy-ness (and because… chocolate…duh).
And yes! There are veggies in there too! Smooth, healthy-fat filled avocado, and a bit of spinach- thanks to its previously discussed neutral-flavored versatility.
Aaaaaaall that paired with the combination of fresh mint and a wee bit of peppermint extract makes this gem a crazy refreshing decision… that you absolutely want to make.
As mentioned, it’s not ice cream. Ice cream has its place and time.
But what we’ve got right here is a hell-of-a healthy substitute to satisfy that (constant?) craving!
The Mint Chocolate Awesome
Makes 1 smoothie
1/2 an Avocado
1/2 a Medium (7-8 in.) Banana (frozen)
1 cup Almond milk (I used Blue Diamond, Almond Breeze, Original)
1/2 cup Spinach (tightly packed)
6-8 Mint leaves*
1 tsp. Vanilla extract
1/8 tsp. Peppermint extract
4 squares (a little less than 0.5 oz.) of Dark chocolate (I used Green & Black 85% Dark)
1 tbsp. Flax meal
2 Ice cubes
Toss it all in a blender. Blend for 30 seconds to 1 minute, or until smooth.
* I honestly don’t know if the mint I got from the grocery store is peppermint or spearmint. I found it under the vague label: “Mint.” A Google image search was unsuccessful at giving me more indication of what is in my fridge. However, I hear they are fairly interchangeable, with spearmint being a bit stronger, and peppermint being a bit sweeter.
Sip it. Savor it.
Yum…sans the subsequent sugar crash.
